In reply to <a href="https://budapestcookingclass.com/hungarian-cottage-cheese-dumplings-recipe-turogomboc/#comment-1808">Minou</a>.

Hello Minou,
Yes, túró is indeed very similar to Polish twaróg. They’re both fresh, soft farmer’s cheeses, and in most Hungarian recipes twaróg works as an excellent substitute. The main difference is usually in texture: twaróg can be a little drier or firmer, while Hungarian túró is often slightly creamier and softer. If you want it closer to túró, you can simply mix in a spoonful of sour cream or a splash of milk to adjust the texture.
Finnish rahka is also quite close, just a bit smoother and more tangy, so it can also be used depending on the dish.

“It’s wonderful to hear that you’ve found Polish and Finnish products in Stockholm — and I’m delighted that Hungarian recipes have caught your interest! I hope you enjoy trying them.

Is túró similar to twaróg, the East European farmer's cheese? I'm trying to find the best substitute for túró. I've found several interesting recipes here. I'm going to try many of them. Hugarian kitchen is rather unknown here in Sweden. And so is túró. Now we can buy Polish twarog here. When I moved from Finland to Sweden in my youth I really missed Finnish rahka, the farmer's cheese. It was not traditionally used here. Polish bakeries and patisseries here in Stockholm saved me. Now I can buy Polish twarog and Finnish rahka here.

Hello Liliana,
Add a bit more semolina then. You may have to play with the amounts a bit, until it is perfect.

Hi Judit!

Remélem, jól sikerülnek a túrógombócok! :)
Üdv,
Ági

I am celiac (diagnosed 3 years ago), so I use polenta instead of semolina (also use it instead of semolina for dumplings in soup) and works really well, if I don't tell it is polenta, nobody notices the difference.

Celiak vagyok (3 évvel ezelőtt diagnosztizálták), ezért búzadara helyett polentát használok (a levesbe gombócokhoz szintén búzadara helyett), és nagyon jó, szinte nem lehet különbséget érezni.
