How to make semolina dumplings?

This semolina dumpling recipe is very easy to make, it does not require many ingredients, preparation time, or advanced cooking skills. Making those fluffy dumplings is always a challenge, you have to figure out the right egg-semolina ratio, find the fine balance in order to make soft, but yet stable dumplings.

Equipment

  • 1 Bowl
  • 1 Spoon
  • 1 Medium pot
  • Measuring cup
  • Measuring spoon

Ingredients
  

  • 2 whole eggs
  • 1/2 cup coarse semolina
  • 1 tbsp salt
  • Parsley optional

Instructions
 

  • In a bowl mix 2 whole eggs with 1/2 cup of semolina. Do not whisk the eggs, just stir gently.
  • Do not add any salt to the mixture. Put it in the refrigerator for about 5 minutes, the semolina will absorb some moisture, the batter will get thicker.
  • In a larger pot heat 1 liter of water, add 1 tablespoon of salt, bring it to a boil.
  • Form small, ellipse-shaped dumplings using two tablespoons. Gently drop the dumplings in the boiling water, cover with a lid and and simmer for about 10 minutes. They will double in size. Remove, place them onto a plate, and serve in the hot soup.
