
Goulash soup (Gulyásleves)
Goulash soup is Hungary’s most famous dish and a proud symbol of traditional Hungarian cooking. Originally a meal of herdsmen (gulyás), this rustic beef soup is hearty, aromatic, and full of flavor.
It’s made by slowly simmering beef chunks with onions, sweet paprika, caraway seeds, potatoes, carrots, and sometimes root vegetables like parsnip or celeriac. A key addition is csipetke — small, hand-pinched egg noodles that are added to the soup near the end of cooking, giving it extra texture and making it even more filling.
The generous use of Hungarian sweet paprika gives the broth its rich red color and warm, slightly smoky flavor.
Unlike a stew, goulash is served as a soup—light enough to enjoy as a first course, but satisfying enough to be a full meal, especially when paired with fresh bread.
