The original recipe is without the dumplings, but believe me, it is a great addition, the soup is more satisfying and really warms you up on cooler days.
Also, the dumplings are easy and quick to make, you need only a few ingredients.

Hungarian egg drop soup should not be confused with caraway seed soup which is very similar but cooked without eggs.

You will also need some good quality sweet paprika powder which gives it a nice flavor and color. Be careful, do not burn the paprika or ot becomes bitter. Some recipes call for vinegar, I prefer making this soup without it.
You will need ground caraway seed which is really easy to purchase in Hungary but can be quite challenging for you. You can use a mortar or a spice grinder. The Secura Electric Coffee and Spice Grinder at Amazon is easily available for anyone, you can even grind your own coffee and different spices.

Hungarian mushroom soup (Magyaros gombaleves)

What makes this Hungarian mushroom soup so delicious and unique? Chunks of mushrooms with authentic Hungarian sweet paprika and lots of sour cream. It is not a cream soup, please do not blend i! It’s done in 45 minutes and it is made with homemade pinch noodles!

You can find Hungarian paprika in most grocery and spice stores now, as well as Amazon.

The majority of Hungarian soups are thickened in some way, such as roux, sour cream or egg yolk.
I thickened this soup with roux, toasted all purpose flour in oil, then added paprika and sour cream. The addition of paprika requires particular care, because burnt paprika tastes bitter. Before adding paprika, always remove the pot from the heat and wait a bit. When the roux has achieved the desired paprika color, add the sour cream and mix well. The prepared, seasoned roux is diluted with liquid.

What type of mushrooms should you use when making Hungarian mushroom soup?

Traditionally wild mushrooms were used to make this soup, nowadays it is a bit challenging to purchase them out of season, I usually use button mushrooms. When looking for mushrooms choose those that have a fresh odor, are dry to the touch (not slimy), and are free of any discoloring.

What is Hungarian pinched noodle (csipetke)?

Hungarian pinched noodles (Csipetke noodles) are one of the fastest styles of homemade noodles to prepare, it’s actually quite quick and simple, can be made in just a few minutes. While csipetke might look like nokedli, the Hungarian version for German spaetzle, the pinched noodle dough is made without water, only egg, flour and a pinch of salt.

The pinched noodle name comes from the way they are formed. Pinches of dough, about the size of a lemon seed, are rolled into a ball, flattened, and dropped into rapidly boiling water, cooked until tender.

Hungarian Jókai bean soup is one of the most popular comfort foods in Hungary. It was named after our famous Hungarian writer Mór Jókai, because he was a big fan of this soup. A slowly cooked soup with smoked meat, beans, vegetables and noodles – a satisfying soup for cold days.

Cooking time: 2 hours
Serves 4

Ingredients:
200 grams (7 ounces) of dried pinto beans (soaked overnight)
150 grams (5.3 ounces) of smoked uncooked pork (trotters, neck) – cubed into ½ inch cubes
2 bay leaves
10 black pepper corns
5 cloves of garlic
2 medium carrots – peeled and cut into ¼ inch slices
1 medium parsley root or parsnip – peeled and cut into ¼ inch slices
100 grams (3.5 ounces) of smoked paprika sausage – cut into ¼ inch slices
Vegetable oil (sunflower)
2 heaping tablespoons of plain flour
1 good teaspoon of sweet paprika powder
Salt to taste
Sour cream
For the Csipetke pinched noodles
1 egg – beaten *(the amount of dough you can make with one egg is enough for a recipe for 12 people. I always use only about 1/3rd of one beaten egg.)
Pinch of salt
All purpose flour – as much as necessary to create a nice soft dough

Directions:

Soak the beans overnight.

In a large soup pot cook the cubed smoked pork with the peppercorns, 4 cloves of garlic and bay leaves in 3 liters of water until the meat is half tender.

Pour off the soaking water and add the beans to the broth. Cover and cook until the beans are almost tender.

Csipetke (pinched noodles) can be cooked directly in the soup broth, or in plain water. It is a great accompaniment for this soup. Their name comes from the way they are formed.

In a medium bowl mix together the egg, the salt and the flour, and knead with your fingertips until a soft dough forms. Pinch off small pieces of dough about the size of a lemon seed and roll them.

Cover with plastic wrap and let sit for 15 minutes. You can use it immediately if you are in a hurry.

When the beans are almost tender, add the carrot and parsley root slices, the celery root cubes, and the sausage slices. You also add the pinched noodles. When you add the noodles, stir the soup otherwise the noodles will stick together. Cover with the lid, bring back to a boil, reduce the heat and keep cooking until the vegetables are tender. Add salt if necessary.

Roux (to thicken your soup): Heat oil in a pan; add 2 tablespoons of flour, stirring constantly. You need just enough oil to make the consistency of your roux not too thick and not too thin. It should spread out in your pan and bubble a little.
After 2-3 minutes of searing, when it starts to brown, take it off the heat, add 1 clove of minced garlic and stir. Allow to cool and add 1 teaspoon of red paprika powder. Now add some water (or liquid from the soup or cold water) to the roux to thin it. Pour this mixture back to your soup pot and bring the soup back to a boil.

Serve with sour cream.

Enjoy!

Hungarian semolina dumpling soup is one of the our favorite Sunday soups. The semolina dumplings are floating in a bowl of homemade chicken, beef or vegetable soup. Making those fluffy dumplings is always a challenge, you have to figure out the right egg-semolina ratio, find the fine balance in order to make soft, but yet stable dumplings. If the mixture is too wet, the dumplings will fall apart while simmering. If you add too much semolina, your dumplings will be stony.

How to make super tender semolina dumplings?

Tip 1. Do not whisk the egg and make it foamy. Just gently stir.
Tip 2. Do not add salt to the mixture, it will make your dumplings firm. Add salt to the water that you boil the dumplings in.
Tip 3. For a medium egg (around 50 grams) you add 50 grams (1/4 cup)of semolina.

I cooked this soup with chicken breast fillet, you can also use other chicken parts with bones, the cooking time will be longer then. Or you can make it without meat and create a delicious vegetable soup.

What type of semolina to use?

In Hungary we use coarse ground wheat farina (coarse semolina) , white-beige in color, we also call it Gríz. That is why it is called ‘grízgaluska’ soup. Galuska means dumpling.

Green pea soup

is an easy healthy recipe to make and it tastes wonderful when served with crispy cheese chips. If you serve it without the cheese chips, it is a great food for vegans, also, it is gluten-free. Ideal weeknight dinner recipe.

Recipe

Ingredients for 2 people:

500 grams (17, 6 ounces) of frozen green peas

1 small onion, diced

1 coffee spoon of baking soda

100 grams (3,5 ounces) of good quality semi-dry cheese, grated

2 tablespoons of vegetable oil

ground black pepper

salt to taste

Directions:

In a soup pot, sauté the onions in vegetable oil over low heat, stirring frequently, until translucent. Do not let them burn. Salt lightly to help tenderize them.

Add the frozen green peas, pour over 2 cups of water, sprinkle with ground black pepper, salt to taste and and cook for about 10 minutes.
Cooking tip: Add baking soda to the cooking water when you are boiling green vegetables such as beans, broccoli or green peas, so you can keep those greens green.

Meanwhile, you have time to make the cheese chips: Preheat oven to 375.

On a baking sheet lined with parchment paper, spoon the grated cheese by tablespoonfuls 2 inches apart. Spread each mound to a 2-inch diameter.

Bake in oven for roughly 10-15 minutes or until crisp and golden. Cool completely on baking sheet. Remove from baking sheet using a thin spatula.

Using an electric blender puree the soup until smooth. Serve with the cheese chips on top.

Enjoy!

Hungarian potato soup with sausage is an easy soup to make, and its flavor is unique. It has been a favorite in my family for many generations, full of flavor with a rich hearty broth thickened with sour cream. The deep smoky flavor comes from the sausage which makes the potato soup super delicious. This Hungarian potato soup with sausage is perfect for warming up to on a cold day.

It is just some potatoes cooked in water with sausage and bay leaves. The bay leaves are an important flavor ingredient. Do not omit them. In the end you stir in a light roux with some paprika powder and sour cream and the potato soup is done. Easy, 30 minute meal, perfect dinner for busy weekdays.

What kind of sausage to use in the potato soup?

Dried or smoked sausage (száraz kolbász, füstölt kolbász): It is ready to eat, no need to cook it. You can have it with bread and butter and make sausage bites for breakfast and dinner, or make it as a sandwich and place the sausage between 2 slices of bread. This sausage can also be used in a variety of different Hungarian soups and main dishes (potato soup, lecsó, layered potatoes, bean soup, potato paprika). It is close to the Spanish chorizo in taste and look.

If you want to learn more about sausages, CLICK HERE!

What is the best paprika to use?

Use sweet paprika powder that has a rich red color. I never use smoked or spicy paprika in this dish. We add the sausage to get the smoky flavor, and you can make your dish spicy after you serve, you add as much heat to the dish as you want. I love to mix in some Erős Pista (Hungarian chili paste), adds such a bold, spicy kick to the dish or sprinkle with some fresh hot peppers.

Hungarian fish soup (Halászlé)

is one of the most popular Christmas dishes. It is a hot soup prepared with mixed freshwater/river fish. Even though Hungary is not a “nation of fishermen”, the native fish soup is considered to be a national specialty. Traditionally, fish soup is prepared in a small kettle on an open fire by real fishermen. It is made in many different ways, but all recipes contain onions and ground red paprika among their ingredients and always served with fresh, white bread.

Recipe

Ingredients for 4 people:
500 grams (18 ounces) of carp tail
500 grams (18 ounces) catfish fillet
1 onion, chopped finely
1 good tablespoon of pork lard or 3-4 tablespoons of vegetable oil
2-3 tablespoons of sweet red paprika powder
6 cups of water
Salt

Directions:

In a soup pot, mix the paprika powder in melted pork lard or vegetable oil. (To release paprika’s flavor you must dissolve it in oil or lard.)

Pour over 6 cups of water, salt it and cook the carp tail with the chopped onions until fish is tender, the meat falls off the bone.

Take the fish out and remove the meat from the bones and press it through a strainer back into the soup broth.

Place the catfish fillets into the soup and cook it for a couple of minutes, until fish is tender.

Hungarian summer green pea soup – Zöldborsóleves

Welcome a little summer into your kitchen with fresh vegetables. The green peas are in season from June to end of July. Hungarian summer green pea soup is most delicious with the freshest peas you can find, but of course sometimes those will be ones from the freezer. It is cooked with home made pinched noodles, in Hungarian we call it ‘Csipetke’, one of the fastest homemade noodles to prepare. Their name comes from the way they are formed.

Pinches of dough, small rolled pieces about the size of a lemon seed, dropped into rapidly boiling soup or water and cooked until tender.

A light vegetable soup spiced with Hungarian sweet paprika powder and fresh parsley.
